INGREDIENTS:

NO-BAKE OAT-DATE CRUST

1 cup packed medjool dates, pitted
1/4 cup coconut oil, melted
1 3/4 cup Bob's Red Mill Oat Flour
1 teaspoon sea salt

LEMON-CURD LAYER

1/2 cup maple syrup
1/2 cup lemon juice
1/4 cup water
2 tablespoons Bob's Red Mill Cornstarch
3 tablespoons non-dairy milk
1 tablespoon coconut oil

COCONUT CREAM LAYER

2 cans full fat coconut milk, refrigerated overnight
1 tablespoon maple syrup
1/2 tablespoon coconut oil, melted
1-2 tablespoons Bob's Red Mill Coconut Flakes (optional)

INSTRUCTIONS

NO-BAKE OAT-DATE CRUST


  1. Add your pitted and packed dates to a small bowl, cover with boiling water and let sit for 5 minutes. After 5 minutes, drain and add to your blender or food processor.
  2. Add 1 cup of oat flour, coconut oil, and sea salt to your food processor or blender. Blend on medium/high until a thick, smooth paste is formed. You may have to stop the blender and scrape down the sides a few times to make this happen. 
  3. Transfer the contents of your blender or food processor to a large bowl. Add in your remaining 3/4 cup of oat flour, 1/4 cup at a time. After each 1/4 cup, knead the flour into the paste, until a dough forms and the flour is incorporated. The dough will form a thick ball when all of the flour is mixed in.
